Chopping block question

Making a couple of chopping blocks (cutting boards) for Xmas gifts and had a question or two. First will glueing together the strips be sufficient or should a reinforce with dowels/biscuits ?
Second: what kind of finish, if any, that would be food safe and stand up to the use of kitchen knives?

For cutting boards, use Titebond III waterproof glue, although Titebond II also is a good choice. No need for reinforcing with biscuits or anything else. Just make straight, clean joints. Also, there's no need to finish, but if you do, simply use mineral oil from the pharmacy.

Is it going to be an end grain up board?

As long as all the pieces are grain oriented the same, yer ok. If ya gonna put end pieces on that run at a right angle to the main portion, ya need to allow for movement.

And, the receiver needs to apply mineral oil every so often. Readily agree with the titebond glue.
