Both ends pivot
It looks like there is a knob that goes under a pivot axle on the end in the air that would hold it down on the left side. What has been curious now though is what is being done to the carriage and/or table assembly to make it usable when pivoted on the left side rather than as now (on the right side).

Shopsmith MKVII
I have a VII and have used it extensively and am excited to see this "evolution" of the shopsmith tool. With the VII it is very easy to tilt if the headstock is at the down tilting side. Its a perfect height for shapeing but the existing machine does not have the RPMs you need, it works but not well. The 10,000 RPM's of the new motor would be ideal for shapeing. When in the drill press configuration the VII is a little low to be comfortable, its better to pull up a stool and sit down for any multiple cuts. Does anyone here know if the new motor and controller will retro fit into a MKVII? If it does count me in. Thank you Shopsmith!
It has been said here that the markV headstock will fit the markvii way tubes. One way to be sure is call SS CS.
SS 500(09/1980), DC3300, jointer, bandsaw, belt sander, Strip Sander, drum sanders,molder, dado, biscuit joiner, universal lathe tool rest, Oneway talon chuck, router bits & chucks and a De Walt 735 planer,a #5,#6, block planes. ALL in a 100 square foot shop.

BTW The Mark V headstock will, repeat will fit on the Mark VII ways. I have that second and third hand from very reliable sources.

After looking at the video and the last view(the one where it is being 'polished', it appears that the knob referred to on the left end has a twin on the right end. Looking at the earlier view of it being raised to vertical(right end) the casting appears to have two notches that fit over the 'pivot pin'. I believe the knobs are for locking down in horizontal position.
The right end still has the screw upright lock, but the left end does not. I believe that one is unnecessary due to the center of gravity becoming very low due to the headstock being positioned low. edit - or it may have one on the back side - same casting for both ends.
The way bench tube castings have what appears to be a slot for the way tube casting notched(open sided) holes. That would provide alignment when lowered to horizontal position.
I do not believe the current lift assist would work without modification since it attaches to the way tubes. It is redundant when raising it to the left due to the center of gravity being low. You probably have to hold it back to prevent slamming into vertical.
Rack on both sides of the table support tubes - Interesting and simple solution!

My eyes are not good enough to see a rack on both sides of the table support tubes. But, I thought the table trunnion looks different.
