From everything I've heard, marble makes a better dough surface than granite does, Marble will absorb a small bit of oil, making it less sticky. It's also softer making it more knife friendly. (Barely!)
I wouldn't use either for a pizza stone, though. They'd both probably crack.
I have seen granite "sharpening tables" at high end wood working tool sites priced in excess of $2000. If you're happy with the flatness, go for it.
I have a few 12 x 12 tiles and slab of back splash about 2 ft long x 6 in wide I use with varying grits of sandpaper for flattening and sharpening. Always good to have a known flat surface.
