Router use question...

Hi all.. (sorry in advance for the longish post)
I finally got the old SS out this past weekend and ripped some curly maple boards I got from my local Rockler store so that I can make some wall mounted kitchen hangers for holding a pot-n-pan attachment (the wall stud mounting points we've got do not align with the provided brackets so these 1"x3"x18" mounts are needed).
So, after getting the wood ripped and squared on the edges (thanks to the 4" jointer) I was ready to do some routing of the edges to ensure nobody cuts themselves (unlikely given what it will be used for). Anyway, I've got a Rockler router table with the Porter Cable 7518 router (big dude!) -- unfortunately I've only got one decorative bit that is 1/2" shanked -- all the others fit my hand-held Dewalt router. The 1/2 shanked bit I do have is a Rockler Classic Roman Ogee bit (see here) which I think will look nice but my better half only wanted a round-over done on the edges (blah..boring,etc).
So.... IF I wanted to use the new Ogee bit, I'm not sure exactly how to use it -- it's fairly wide and in playing around with a spare 2x4 I had, I was only getting the bottom flute of the profile... I was a bit concerned about taking off that much material in 1 pass.. When using a larger bit like this, should I be taking off all of the material in 1 pass or multi-pass the operation? I may need to get some scap 1x material to play around with.. Suggestions for fence usage would be appreciated!
Also -- IF I go this rout and get this slicker profile on my finished pieces, what's the best way to sand the more complex edges to ensure the stain does not get too dark making the pieces look odd (similar to what I get on the end grains)...?
