I noticed the screws come in #6, #7 and #8 shank sizes. I understand that the dill bit is used to drill the depth of the hole. But do I need a different bit for different shanks? Won't a #6 shank be different from a #8?

The Kreg jig does not actually drill a shank hole. It drills a stepped pocket hole for the screw head but the screws are self tapping and make their own shank hole.

Only one bit is needed. Although they call them #6,7, & 8 the shank sizes are very close to each other. I measure 0.110" for the #6 screw and 0.117" for the #8, and the step drill bit bores a clearance hole about 0.168".
