The Shop Deputy is not a made up term. It was 'Made Up' by SS. There may be another option. Where are you located? Maybe someone nearby you could be of assistance. I'm in SLC but honestly option b had enough upside to where I just went ahead and placed the order. I like the idea of being able to do the sharpening myself in the future and everyone here is sayin...

I agree with Dusty. The sharpened edge should be dead straight. It may be the light but the scratch patterns from the sharpening process look very inconsistent. That would lead to a non straight edge. The knives are probably salvageable but I certainly would not take them back to the same shop. FWIW...

I know originally SS recommended JPW and sold it. I know the opinion of most here is that JPW is the only thing to use. However, I don't think SS has sold JPW for a long time. When I bought my 510 new in 1994 it came from SS with a can of Treewax which I still have and use. Now SS is selling Minwax....

I have not experienced that. However, I would think one would have to make a conscious effort to turn a blade inside out. In other words it couldn't (shouldn't) happen during packaging. I wonder if it was turned the wrong way (unnoticed) when welded and then just got coiled and packaged.

Start with the knife above the zero line and rotate it down to the line. The knife edge should just touch the gauge when it meets the zero line.
