Something Rick Davis always said in his classes was to lower the infeed table lower than you wanted then raise it back up to where you wanted it. This was to prevent settling of the infeed table and taking more off than you wanted.

Don't know if this is true or not, but it works for me.

Our family uses VISA gift cards so that it can be used anyplace the recipient wants. These can be picked up at most checkouts and banks. There is no counting out cash for each person, just X number of $$ cards and distribute. Gary, you could make the wooden envelope.
