That big set screw is adjusted to achieve that.
A way to check that is the tailstock center point aligning with a drive center point on the quill, then moving the drive center to the top aux shaft and moving the tailstock to the other end. If the points do not align(front to rear), the way tubes are 'twisted'.

Some 1000 grit wet sandpaper and the table cleaned up nicely. Straight edge shows its still flat.

I took the plunge today, started in on the headstock, here are the initial photos. The motor does turn on, but I only let it go a second out of concern for those belts. Please speak out if you see anything I need to look into.

Other than oxidation and saw dust the only thing I see missing is the two screws and wide tinnerman nuts that secure the vent plate.
Examination of the speed control is needed.
I think it will clean up nicely! That rusted motor fan shroud will be a challenge. Evaporust/rags may be the answer.

Well that explains the shiny(?) stuff on the edges of the motor belt.(migrated from idler pulley sheaves).
Insides also look like great progress will be attainable.
