The 2nd pic is of rub collars. They go on a shaper arbor to prevent too big of a bite. The workpiece will glide along a fence and rub on the collar. The collar(s) provide the same purpose as bearings on router bits.

I do see a difference in some of the diameters.
The small round face washer is unfamiliar to me now that I look closer.

The smaller washer in the bottom left looks like it may have straight 'sides' in the center. I've seen these used on circular saws that have a flat on both sides of the shaft to capture the washer and prevent torque from unscrewing the bolt holding the blade. Don't think it's a SS pieces/part.
