I have a cross section of an Oak Tree that had to be cut from or back yare ---it's about 3 ft across ---I want to level it and make a table for the patio---it's been air drying for about 3 years-- ---should I just use boiled linseed oil? or something like poly, epoxy etc. that might keep water from penetrating the wood --i don't need to have it completely sealed--I did a smaller piece that I use as a wall hanging under the patio cover and just used the linseed oil --looks good not sure how it will hold up--
any thoughts

I would use Teak Oil.
You can make your own Teak Oil.
Tung oil, varnish, and boiled linseed oil mix 1:1:1
apply several coats up to 5 coats and I will look great
