Personally, I would judge the surface left, and could not care less about the shavings. I hear there are contests to see who can make the longest, thinnest, widest and most consistent shaving. Life is too short. There, I'm done now.

Plane setup is important, too

Sharpening - really sharp - is necessary but how the yard sale plane is setup is also important.

It talks about the block plane but the basic ideas apply across all planes. Well, I think they do, but then don't have "all" planes.;)
