I suspect is was faster to set up, also he uses the same setup to trim the ends of the drawers, (6:45). which would not work doing it the other way.
At 6:48 it shows the back of the cut and there is no waste piece coming off, so he is really just "planing" the edge with the saw blade not ripping it.

Me too! What matters is the resultant height of the drawer, not the width of the cutoff.
May be a matter of the bottom being a poor reference???
