..the Dewalt planer does not include an infeed or exit table for longer stock..
I can't say that is a recommended height. I just found it handy, or more friendly (without very much of the sandpaper exposed) especially with the tilt of the table. The paper, of course must be well adhered to the disk - no bubbles.

I don't think which part of the Conical Disk is used, makes a deference in the angle of the sharpening, the only difference I can think of is the relative speed of the sandpaper at the point of sanding. This also can be controlled with the speed control.

I would also like to mention, the width of the wood shim is such that it is very close to the blade edge. This was done to give added support to the thin blade.

I haven't yet witnessed the need for infeed or outfeed tables. I have planed 8 ft boards without snipe, just manually supporting the outfeed. The machine is really quite snipe free.
