My main thought was to have a reverse for sanding situations on the lathe. However, you do bring out an good point as there were several situations Ive run across in the moulding and millwork business that did indeed call for changing the direction of the knife and the rotation of the cutterhead for a smoother cut (Up-milling Vs Down-milling) as a means of reducing tearout, especially when cutting a groove.

I always assumed the tongued/keyed washer on the molder/dado arbors, some universal arbors and the shaper arbors were there so that the arbor could be mounted on either side of the headstock and rotated in either direction without fear of the nut coming loose.
