Where is the Date Code and SN on a 510, or is it built into the SN?

Well the SN# should be on the same place as any other. On the silver plate below the aux spindles. What you have is a SS500, with the tables that make it a SS510.

I stumple into a guy this afternoon that has a 510 SN 355510 but does not know how old it is, SS site sez they put a separate date on them instead of listing SN buy date if I understood that right.

They DROPPED SN in 1988 and replaced it with a date code.

Yup. What you have (355510) is a serial number
(not a date code). As indicated in this chart
(which was posted in response to another of your questions), date codes had not yet come into being. According to the chart, 355510 is a Model 500 that was built probably in late December of 1958. If it is now a 510, someone performed an upgrade that has not been mentioned!

Based on what has been posted here, it is a Greenie with a Gilmer Drive System, a single bearing quill and a 3/4hp motor.

Is there a similar chart for determining the age of SPTs?

Yes there is, for some. Possibly not for all.
You can find it
here by clicking on the top level item that you are interested in and when the page shows, browse down. If available, you will find it.
