Peeps far more qualified that I will answer, but you can use taps and dies for metal on wood. I know I have done it, and it works amazingly well.

There are many ways to cut exterior threads on the screw/dowel. Can be done on the table saw, which I experimented with, or the drill press in addition to the router method shown in the video The really hard part is making the corresponding interior thread in the wooden nut.

http://lumberjocks.com/topics/65728 over at Lumberjocks shows a really clever jig adapted to the Shopsmith for cutting interior threads for the lid on a round "box" and this video shows the jig in action.

I believe the same jig could be used to cut exterior threads on a dowel with a few mods.
