In general, I like the idea of leveling inserts, but for such a beautiful and unusual table as that, I would say not. Do put on some felt pads on the bottom of the legs to keep from damaging your wood floors.

I have not used these myself yet but I like the idea of self levelling feet, (either hydraulic, or spring loaded).

Your square legs look big enough that if you recess the levellers into the bottom of the legs with only say 3/8" exposed for them to adjust they should be pretty much invisible. With a couple of thin fixed glides on the waterfall end the self levellers on the other legs should adjust to it.

How are you intending to attach the legs to the top?

If the center legs were 'slightly' shorter, the 'adjusting' could be at the top of the legs where it is much less visible.
