I’m building a coffee table for our patio, it will be outdoors but under a cover Houston has high humidity
Recommendations on what to use.

We used Sikkins prolux srd on our redwood deck. It's a long lasting finish...for a deck. Take a look at Valspar exterior clear wood finish, though.
