Question about the Work Sharp 3000

There have been a lot of talk about the Work Sharp 3000 on this forum and I believe I understand that is works good for chisels, plane irons, lathe tools and etc. Can some tell me how does it work for sharpening ordinary kitchen knifes. I'm talking about a 7" or 9" chef's knife, something larger than a typical pocket knife.

I have been giving a lot of thought to purchasing the Work Sharp. In fact, I have already gotten budget approval from the finance manager. It would really be good to hear that it works equally well for the longer knives (kitchen type) but I don't believe I will let that become a factor. I sharpen chisels and planes very frequently while doing the knives in question occasionally.

I can't speak as to how it sharpens knives as I have never tried. I think it MIGHT be difficult as the abrasive surface is dead flat plate glass and 6" in diameter. Seems to me that if you try to sharpen a long knife the wheel would be truning INTO the edge over half of the wheel and AWAY from the edge over the other half. Seems you would need to tilt the knife slightly to sharpen away from the edge over the entire glade. I don't think you can do this on the Work Sharp.

That said, it does a great job on my chisels and plane irons. I have also used it to chamfer steel rod, and sharpen the edge of copper tubing to turn it into a punch.

I have been able to shapen my wife's paring knives along with my folding pocket knives with no problem. Be careful with serrated knives. You can do away with the serration if you are not careful! You can bring the serration back with a round ceramic sharpenig stick , but it will take awhile!
