You might also consider purchasing some of Nick Engler's DVD's; They have been very helpful in making my repairs.

Is it accurate to assume that since they are not a 'live' performance also, that they are 'missing' the gaffs/ lengthy pauses etc. that make the saw dust sessions distracting to some(not me!)?

i.e. they be more planned and less 'spontaneous'?

There is a write up by Nick concerning what to look for when buying a used Mark V. There are a few things in there that may help illuminate what does or doesn't need messing with during your overhaul.

BB if you are willing to drive a little south of your location, I'll give you a complete headstock with only a few hours operation on it.. I'll never get around to using it anyway.
