Does anyone have a working knowledge of the the lift assist on the Mark 7?

I don't know but from the online catalog it looks like you have to lift the the headstock to the right using the lift assist. Then disconnect the lift assist cylinder then lower the head stock back down without the assist of the lift assist then lift the headstock to the left again without the assist of the lift assist. Is that correct?

That is correct. There is a new quick disconnect mechanism that allows for the tilt in the other direction. With the headstock all the way against the end you have a nice long lever that should make it easy to lift. You need more assistance in the "normal" direction because you are moving the headstock over a larger distance with less of an advantage effectively
