I've done it both with a vise and by tapping with a small hammer. I think that going slow is the key. Can't say that I prefer one way over the other.

Stopped in there to get the rear brake replaced on my second cross country ride back in 2002 when they were still an Indian dealership. No big deal. It was somewhere on W. Colfax is all I remember. Stayed at a really seedy motel just down the street. Had a very nice dinner, though, somewhere up on a hill. Went to the Rockies game the next day. I drive thru the fleabag motel area frequently and have a feeling I know about where it was. I will check it out and let you know. I suspect the eatery you have in mind is likely Sims Landing.
