I have been to many traveling academies with Doug Reid and Mike Young over the years and demos with them both (Mike in the last 10 years or so) and the only thing they wore was an apron.
Lots and lots of YouTube videos around with turners not suited up in armor.
I totally agree with JPG, you need to first learn to respect the machine and it's dangers and not rely totally on safety guards that may or may not work if you ignore basic safety practices.

What you do in your own shop is up to you. What the demo people do is up to them, they are not shopsmith employee's so if some one copies what they do well they get any legal kickback. However when a shopsmith employee show you how to do something well then the company is responsibly for the content.
There are a lot of people showing things that have no business demoing. Remember it only takes a moment to get injured and while you might be lucky your whole life not everyone is.
I try to be as safe as I can in my shop. I just wish everyone did the same.
It is not that one is taught to depend on safe devices it is that one is taught safety and having guards, eye protection, hearing protection, dust protection is taught but not often followed through with. Safety starts and ends with you, so be as safe as you feel you need to be.
