I like the trim-board idea- I would also consider a trim stone with a nice edge to match to.

I agree with this approach. I admit it just suits my taste though, I'd prefer the smooth linear transition from the boards to the stone. The layout of the stones is not highly irregular either, there wouldn't be anything outsized in filling the stone bed out with mortar to match trimstones.

ETA: Is undercutting the stone to lap over boards a good idea? Sounds like a perfect place for moisture to condense and remain.

My observation over several decades is that "in" stuff tends to repeat and the gurus that we idiots pay attention to instead of coming up with something actually new(and useful) they tend to copy history but claim to have thought it up.

They are best ignored(but then we would not be able to purchase anything since the supply chain will only contain the trendy(old discarded decades ago) crap.
