I would use one for the main table and one for the extension table to set them the same so I can return to the table saw and have everything set the same. I could probably do that with a regular stop collar.
Is the adjustment beneficial compared to a stop collar with no adjustment?

The Adjustable Stop Collar is beneficial when doing non-through cuts like dados or rabbits. With the Adjustable Stop Colar it is much easier to fine tune the cutting height than using the Table Raising Crank and Lock on the Carriage. Once the cutting depth is set with the Adjustable Stop Collar remember to lock the table height with the Carriage Table Post Lock.
I have forgotten to lock all the locks before making a saw cut. Not pretty.
Now I check all the locks and many times twice.

That would be a matter of personal preference. I set my main table to the desired height and then set my Extension and Floating Tables, if used, to match.
Using an Adjustable Stop Collar on the Extension Table to "dial in" the height even with the Main Table could be helpful since you have to hold the Extension Table at the correct height while locking it in place.
