Lathe out of balance

I am trying to turn a bowl, but when I am not using two points of connection to the wood stock is wobbly and not truly round. Is there something I can adjust keep my piece true.

Where is it 'shifting' so as to cause the wobble?

What I have going is I am using a live center and drive center to true up a square piece. Typical turning proceedure. I then mount the piece to a Oneway Talon Chuck to core the center out, but when I turn the machine back on the piece is not centered and wobbles.

How have you attached/held the workpiece in the chuck? What surface(true) did you create for the chuck to hold onto when using the two centers?
