Starting a New Tradition

We've always had black eyed peas and cornbread on New Years day.
This year, I'm adding a new treat.
Mountain oysters.
Since Phyllis refuses to be in the kitchen while I prepare them, this tradition may have a short life.

I'd refuse to be there when you "harvested" them.

Another name is calf (or lamb, pig or turkey) fries.
Calf fries are the product of the operation that makes a young bull a steer.

From every litter of pigs, we always waited a short time and did the harvest. Had more time in the mud than I wish. Would never eat them but gave them to the dogs. Like Ed, why eat those when there is so much good stuff to eat.

We did the same thing. The dog thought he was in heaven we we started. My grandparents would cook up some, I tried them once, they did not taste too bad, but could not get past what they were. Boy the pigs sure did squeal.
