anyone know what these things are/do?

The first picture is molder/dado arbors. In the second picture the bottom item is a saw blade arbor for Shopsmith blades that have a 1 1/4" arbor hole. The top item is a #2 Morse taper arbor that fits in the tail stock and is used to mount the drill chuck.

Arbors = for mounting circular discs to the quill shaft. saw blade. grinding wheel shaper cutters. The 'correct' one must be used appropriately.

Tail stock arbor adapter = typically used to mount the drill chuck on the tail stock.
