Boy that sure looks like a branch with the off set I see in the pictures.... Must have been an interesting tree to have grown in that way.

As JPG hinted, I would work quickly to remove that pith. I have found that on some trees used for Christmas trees, it does not seem that important, but for sure on hardwoods such as that black walnut, the quicker you can get that pith out, the better control you have of the stress, checking and warping with the rest of it. I understand about the shoulder. And, I would also remove all bark. Looks like great wood. I have a black walnut tree not much larger than yours in my garage, stick drying for about 10 years now. Working on getting stuff off the top so I can start a project with it. Love me some black walnut, both the nuts and the wood.

About the only wood I would rather work with other then walnut,,,is wild cherry , Love the smell of it .

Love walnut. Both the aroma and it's beauty and, it's workability.
Right up there with it is mesquite, too. Not so much the smell, though. But, boy is it ever purdy. Works nice, as well.
